Pork Knuckles glazed with craft beer and honey

Bad weather is the perfect excuse to cook some strong dish. 

Something delicious that you wouldn’t eat every day.

So last Sunday we cooked pork knuckles with a glaze of craft beer and honey. I can’t highlight enough how good it was! 

It’s and excellent and highly nutritious dish if we side it with baked potatoes and some light green salad.


Pork Knuckles glazed with craft beer and honey

Serves 4

2 Pork knuckles.                                

1 Can craft beer

1/4 Cup honey

Salt

6 Garlic cloves

Peppercorns

1 Parsnip

2 Carrots

1 Leek

1 Bay leaf

Pork Knuckles




  • Boil the pork knuckles with all the ingredients except for the beer and honey for about one hour. Th boiling time will depend on the size of your knuckles. One a half hour should be enough. 
  • Meanwhile, mix beer and honey and reserve. I used Frenchies’ Fresh Harvest IPA as I thought it would be the perfect beer for this dish, and I must say I nailed it.
  • Pre-heat oven to 200 º C
  • After boiling, knuckles are ready for the final touch. 
  • Pour some olive oil at the bottom of a baking tray and spread it around. 
  • Place the pork knuckles in the tray and make some cuts on the skin to get much more flavour. 
  • Pour the glaze of beer and honey over the knuckles and roast for 30 minutes. 
  • Turn and roast, basting every 10 minutes with the glaze. 

The last step is very important. I know because I didn’t do it and the glaze got burnt

I also roasted it for 45 minutes, and I think it was too long.
